Nube question about streaming audio signals for the many informed contributors on this forum - software is not my thing...

I have been happily using my PC as a 'near audiophile' music preamp and recently decided to expand the hardware into an A/V surround setup. I'm having trouble with the audio decoding. In this system the signal will be coaxial SPDIF from a BD-DVD player into my computer's external sound hardware. For music reproduction I have been using Foobar2k software with very pleasing results because of it's decent digital XO, convolution DSPs (for DRC), and kernel streaming. For A/V, however, I will settle for any kind of live decoding of digital signal from the DVD player, and I'll be perfectly happy to start with DD or Dts 5.1. [Minimal or adjustable delay would be a plus.]

I know that there are consumate experts on this forum and I'll so appreciate any and all help with my learning curve. I am not interested in simply passing the DD/Dts signal to an AV receiver because my DIY amps and speakers were built to rock and my sound 'card' is an external ESI Wami-rack 192X, which performs well and has balanced I/O... Signal streaming seems to be the first issue...

Your opinions and help for this application overall or any of the questions below will be greatly appreciated:

1. What is the most flexible open source software?
a. I can get Media Player Classic to 'distribute' a stream but it does not *sound* positionally decoded (e.g. full signal on rear surrounds).
b. Ultimately, I would like to be able to manage as many standards as possible. ...but dudes, don't gimmie no trojan codecs!

2. What (IYO, of course) is the best sounding open source software?
a. for music, I've had the best success with foobar2k but I don't know how to direct the F2k input to the spdif signal from the sound board. I assume it's not THAT hard because F2k will play streams from the web.
b. I'm happy to pay for decent code, but only what I NEED to get decoding working on a streamed signal...

3. Are step-by-step configuration instructions available? Pretty Pleeeeeze???
* software is definitely my weak suit!

AGAIN - MANY THANKS IN ADVANCE FOR ANY HELP!
