Hi,
I'm searching a way to predict the average bitrate (and by the way, the result file size) when trancoding ac3 to aac 5.1 with faac and is "-q" option line.
Any suggestion / mathematical formula ?

You need to either dig into FAAC's source code, or ask this question in the faac-dev mailing list. But, that said, from a user point of view, unless things have changed dramatically in FAAC, it isn't the best encoder at the moment. Nero AAC & iTunes AAC are reportedly better.

A quality based encode (VBR) can't be predicted easily, can vary very much with audio source.
