Is there an HDTV capturing guide for the wmv or x264 formats? I am interested in backing up some HDTV shows and don't know where to begin. Any assistance is appreciated. Thanks.

Do you know what kind of format HDTV is in where you live? I know how to work with MPEG2 HDTV pretty well, but I've never done much work with H.264 sources. The hardest part of doing this is getting your video cleaned up, edited, and ready for encoding. Once you've done that, you can encode to pretty much any format you want. I use XviD myself, but you could just as easily use x264, WMV, etc. If you're wonding more about the specifics of x264 or WMV encoding (what settings to use, what bitrates to use, how many passes, etc.), it might be better to ask those questions in another area. If you want to know more about how to prepare your HDTV material for encoding, then yes this is the place to ask.

What application does everyone use to capture the .ts streams?

I have a Fusion HDTV card and I use its own software to do my recording. I think it also works with MCE software, but I've never tried that.
