How would i convert 1080p Mkv to 720p Xvid

Hi.

I was wondering about the best way of converting a 1080p Mkv source into a 720p xvid avi file. Reason being is that i have two videos in a trilogy in 720p and the third in 1080p, my tv only supports upto 1080i so i make sure all my movies are in 720p format as i find it looks the best.

what program + settings would be the best to do this with ?
