I just spent something like two weeks trying to solve the XBOX 360 streaming dvd problem. I decided to write a Blog Entry (http://thebensons.org/blog/2007/01/22/my-solution-to-the-xbox-360-streaming-video-problem/) to walk people through my solution. Maybe I can save someone else some time playing with the other solutions.

It's a relatively new process for me so I may still do some refinement as I watch more of my videos. It's a long read though so be kinda prepared.

The next problem to solve is why vobsub and vsrip do not pull the right timecodes.

I looked around and did not really see any appropriate forum for this so I put it in general.

I read your blog and have been trying to do the same thing you are doing. The best way I have found to do this is rip the movie however you want into one vob then get a program like VideoRedo or VOB2mpg and your done.
If I were to run a ripped DVD through "quick stream fix" in videoredo then run it through TSconverter you would actually get full rewind and fast forward while streaming through the media center part of the 360.

...VideoRedo or VOB2mpg...

You wont get burnt in subs and VOB2mpg is really slow.

I dont see that TSConverter will give you subs either. Using VLC, you get a fully compliant mpeg2 so rewind and forward also work. Just a thought. For simple movies VLC is really fast and really clean.
