Currently, in trying to convert a 1:40 minute long movie DVD2AVI outputs 60+ .avi files to my PC, which is a pain in the butt to edit. Is there any way to decrease this number?

Yes. Don't use DVD2AVI. Use DGMPGDec and then serve the video into your editor and encode from there.
