Is such a conversion possible? I've tried searching with no luck. I'd like to retain all of the channels if possible.

Yes, it is. But it depends on what hardware and software.
You need a DTS-ES decoder. The only one I know there is as software solution is the PowerDVD 7 Deluxe one. As hardware, I only know the Soundblaster Audigy 2 ZS and up and X-Fi series (might be other vendors, but I haven´t heard of any).
At least you´ll need a 7.1 capable soundboard with ASIO support and PowerDVD 7 Deluxe.
Enable 6.1 channel output on your soundboard.
Play the DTS file (PowerDVD can play it as a standalone file) in 6.1 channel config.
Start an ASIO recording capable software (i.e. Vegas 7, Kristal Audio Engine, Audition 2.0). Somewhere in the config options there should be an option to use ASIO as audio input for recording.
Set 7 tracks, asigning each track a channel from the input. Play the file in PowerDVD and record on the ASIO capable software.

Channel ES Matrix, is a mixture of channels SL SR.
Channel ES Discrete, is an independent channel, can be created with SRS Circle Surround II

There´s also the fact that even though FAAC can encode any number of channels up to 64 channels and FAAD2 can decode such a file, the most common and under development encoders allow only 6 channels streams, and FAAD2 based Directshow decoders cannot decode more than 6 channels (go figure why).
So to transcode DTS-ES Discrete will be pointless as you´ll need to get rid of that 7th channel or mux it into Ls and Rs if you would like (as standard DTS decoders do as they can´t deal with the extra channel; this is a DTS choice for backwards compatibility with these standard decoders), wich is already done in DTS-ES Matrix tracks.

Cyberlink´s Audio Decoder is crippled under Directshow. It can only be used by PowerDVD, so GraphEdit is out of the question.

If the stream is already 7-ch why would you wanna apply a CS II decoding? CS II cannot decode DTS-ES Discrete 6.1 streams.

Also, yes, DTS Pro Encoders can decode DTS-ES streams (but of course, it´s a $1000 bucks piece of software).

I work of stereo to 6.1

01. The DTS 6.1 ES Matrix, one can heacer with, WaveLab 5 - Suite V.I (I am constructing a guide, when it is finished, I her will present been charmed with to Steve Thomson)
02. The SRS Circle Surround II if it creates the channel ES discrete, I it am employed at Plogue Bidule.
03. The DTS PRO SERIES or DTS MASTER AUDIO they are very expensive, but very good
