Authoring Alot of DVD's with a TV series compilation..

I have got a full season of a TV show, and all together the files are around 8gb. How many DVD's do you think this would use with decent quality settings?

What application would be most suitable?

Why would you first convert your DVDs to XviD and then convert the XviDs back to DVD format?
