Rgb, Yuy, ???? Help!

What is the best codec/compressor/whatever to capture analog VHS? I'm using VirtualVCR to capture all my VHS home videos to AVI, then convert to mpeg2 for DVD authoring.

Can someone shed some light on RGB, YUY, etc... without linking me to some massive, technical description?
