What does keep closed captioning do?
What does special error processing do?
Is it actually worth enabling menu encoding? because the space saved will be minimal?
Is multiple encoder processes for computers with dual processors?

Keep closed captioning is for ntsc closed captions. closed captions are similar to subs but are for the hearing impaired. they have to describe sounds as well as speech . (like 'sound of door closing', etc). keep closed captioning carries the closed captions to the new resulting dvd
menu encoding is best done when you have large menus. although i keep the setting on all my encodes. imho it doesnt hurt
multiple encoder processes is for dual processors.. or if you have a hyper threading processor (sort of a virtual dual)
special error processing is a debuging mode. dont mess with that unless jdobbs asks you to.

Cheers, So menu encoding is stable and works good? Not keeping closed captioning still keeps the regular subtitles (minus sounds)?
