Are there any way to accellerate HD content (eventually quicktime) hardware wise, or should any HTPC really carry a dual-core CPU???

Video cards from Nvidia with PureVideo technology accelerate HD content.
For example the GeForce 7300 GS for about 70 US$.

Oh I guess my 7800 GTX will do just well then... However I was not aware that PureVideo is payware? As if $800 for the card itself wouldn't do??

Hmm... actually you just need a player that supports the PureVideo technology.
For example, PowerDVD 7.

You mean encoding, right? Here's a link to a review: http://www.anandtech.com/video/showdoc.aspx?i=2645. It appears That ATI's solution is called Avivo. So take your pick!
